Stuffed Acorn Squash

Meat and vegetables in one convenient entree. Experiment with different spices, or you might even try ground chicken.


  • 2 each acorn squash
  • 1 pound ground beef or ground turkey
  • 1 cup chopped onion
  • 1 clove minced garlic
  • 1 tsp ground cumin
  • 1/4 tsp ground turmeric


  1. Preheat oven to 400 degrees F. Cut squash in half lengthwise and remove seeds. Mix together the beef or turkey, chopped onion, garlic, cumin and turmeric. Divide beef mixture evenly and fill the squash cavity. Place squash in a glass baking dish; add about 1 inch of water to the dish. Cover with aluminum foil and bake for about 1 hour, until the meat registers 160 degrees F on a meat thermometer.
