Spinach Lasagna

A hearty meatless meal Serve it with garlic bread and a veggie-filled tossed salad. Using uncooked lasagna noodles saves time -- and gives you a few less dishes to wash, too.

Ingredients

  • 1 pkg. lasagna noodles
  • 1 pkg. frozen spinach, thawed
  • 4 cups marinara spaghetti sauce
  • 2 lbs. ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 each egg

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl, mix together the ricotta cheese, 2 cups of the mozzarella cheese, and the egg.
  3. Squeeze some of the excess moisture from the thawed spinach.
  4. Spread 1/2 cup of the marinara sauce on the bottom of a 9x13 baking dish.
  5. Place 3 lasagna noodles on top of the sauce, then spread 1/2 of the cheese mixture and 1/2 of the spinach evenly over the uncooked noodles.
  6. Top with 1 cup of sauce.
  7. Place another layer of noodles on the sauce and repeat the cheese, spinach and sauce again.
  8. Add a final layer of noodles and cover them with sauce.
  9. Top with the remaining cup of shredded mozzarella.
  10. Cover with foil and bake for 40 minutes.
  11. Remove foil and cook for 10 more minutes to brown the cheese slightly.
  12. Let stand for 5-10 minutes before serving.
