Slow Cooker Ruben Sandwiches

Yield: Makes 4 servings.


  • 1 1/2 pounds corned beef brisket , cooked
  • 1 jar sauerkraut , drained
  • 1/2 cup thousand island salad dressing
  • 2 cups Swiss cheese , shredded
  • 8 slices Rye bread , toasted


  1. Place meat in slow cooker.
  2. Spread sauerkraut over the meat.
  3. Drizzle the 1/2 cup salad dressing over all.
  4. Cover and cook on low-heat setting for 2 to 3 hours or on high-heat setting for 1 to 2 hours.
  5. Remove meat from cooker and place on cutting board.
  6. Thinly slice meat against the grain.
  7. Return sliced meat to the cooker; stir to combine with the cooking liquid.
  8. Using a slotted spoon, spoon corned beef mixture onto toasted bread.
  9. Top with cheese and if desired additional salad dressing.
