Chicken in Tomato Sauce with Basil and Mozzerella

Yield: Serves 4.

Turn leftover roasted chicken into a completely different dish that comes together in about 20 minutes. We made this the other night and it disappeared. Fresh mozzarella cheese melts much faster and more evenly than more processed mozzarella does and is worth the little extra effort. Pine nuts can be expensive; look for them in your bulk food section to save money.

Ingredients

  • 1 can crushed tomatoes (28 ounces)
  • 2 cups chicken, cooked and diced
  • ½ cup chicken broth
  • ½ cup chopped fresh basil
  • 2 Tbsp. chopped fresh parsley
  • 4 ounces fresh mozzarella cheese, grated
  • 2 Tbsp. toasted pine nuts (optional)
  • sea salt and pepper to taste
  • 8 ounces pasta, cooked according to package directions

Instructions

  1. In a saucepan over medium heat, combine all ingredients except cheese and pasta.
  2. Simmer uncovered until warmed through, about 5-7 minutes.
  3. Add the shredded fresh mozzarella and stir until completely melted.
  4. Serve over pasta.
