Buttermilk Pancakes


  • 1¾ cups unbleached flour
  • ¼ cup whey protein powder
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • ¼ cup melted butter or oil
  • 2¼ cups buttermilk
  • 2 tsp. vanilla
  • 2 eggs, slightly beaten


  1. In a large bowl, combine dry ingredients. In a separate bowl, combine wet ingredients. Make a well in the center of the dry ingredients. Pour wet ingredients into bowl of dry ingredients and mix just until combined. Batter will be a little lumpy.
  2. Heat a frying pan or griddle to medium heat and grease. Using a ¼ cup measure, drop batter onto griddle. Cook until pancake is bubbly and appears dry around the edge. Flip pancakes over and cook until browned.
  3. Serve with warm syrup or cooked fruit.
  4. Tip: If you don't have any whey protein powder or want to make "traditional" buttermilk pancakes, omit the protein powder and increase the flour to 2 cups.
