It's a quick and easy way to fix a Mexican dinner that won't have you stuck in the kitchen. Instead, let your slow cooker do the work! You could also serve this dish with warmed flour tortillas.

Ingredients

  • 1 pound ground beef
  • 2 cans tomatoes, crushed, 15 oz.
  • 1 can corn
  • 1 can black beans
  • 1 can kidney beans
  • 1 pkg. ranch dressing mix
  • 1 pkg. taco seasoning
  • 1/2 cup red onion, chopped
  • tortilla chips , crushed
  • sharp cheddar cheese , shredded
  • sour cream, reduced fat

Instructions

  1. Brown ground beef and drain. Combine all of the ingredients except the tortilla chips, sharp cheddar cheese, and sour cream in a slow cooker and cook on low for 5-6 hours. Serve with remaining ingredients.
