Apricot Coconut Bars

I remember these from when I was a little girl. It's important to use Solo brand filling - others are too runny and the result isn't very good.


  • 2 cups unbleached flour
  • 1 cup sugar
  • ½ tsp. baking soda
  • 1 tsp. salt
  • ¾ cup butter
  • 1½ cup flaked coconut
  • ½ cup walnuts (optional)
  • 2 cans Solo brand Apricot cake and pastry filling (look for this with the other pie fillings)


  1. Mix together flour, sugar, baking soda, salt, and butter with a pastry cutter or mixer until it resembles coarse crumbs.
  2. Stir in the coconut by hand.
  3. Press half of the mixture into a greased 9x13 inch baking dish.
  4. Spread the filling evenly over this.
  5. Sprinkle the remaining mixture and walnuts over the top.
  6. Bake at 400 degrees for 20-25 minutes.
  7. Cool before serving.
