Lemon Bars

A nice reminder that Spring is on its way.

Ingredients

  • 1½ c. unbleached white flour
  • 3/4 c. powdered sugar
  • 3/4 c. unsalted butter
  • ½ tsp. sea salt
  • 4 ea. eggs, beaten
  • 3 Tbsp. unbleached white flour
  • 2 c. granulated sugar
  • 1/2 c. lemon juice
  • 2 tsp. grated lemon zest

Instructions

  1. Combine flour, powdered sugar, butter and sea salt until the mixture resembles coarse crumbs.
  2. Press into the bottom of a greased 9x13 baking pan and cook at 325 degrees for 25 minutes.
  3. Remove the pan from the oven and increase heat to 350 degrees.
  4. Mix granulated sugar and 3 tablespoons flour together in a mixing bowl (this will prevent the flour from lumping).
  5. Add the eggs, lemon juice and lemon zest, mixing thoroughly.
  6. Pour over the hot crust and bake at the increased temperature for 20 minutes.
  7. Remove from the oven and dust with powdered sugar.
  8. Cool before cutting and serving.
