Fruit Pizza

This is one of my favorite springtime desserts. You can change it up by using different fruits. It's a great way to get your kids to try new things!

Ingredients

  • ½ recipe Sugar Cookie dough
  • 2 cups sliced fruit (strawberries, kiwi, Mandarin oranges, pineapple, blueberries, mango, etc.)
  • 8 oz. cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp. vanilla

Instructions

  1. Line a baking stone with parchment paper (rectangular or round is fine).
  2. Pat sugar cookie dough to about 1/2 inch thickness, leaving room at the edge of the baking stone for the cookie to spread while baking (about 2 inches).
  3. Bake cookie at 350 degrees until cooked through and browned, about 20 minutes.
  4. Allow cookie to cool completely before decorating.
  5. In a medium-sized bowl, mix together the cream cheese, powdered sugar and vanilla.
  6. Spread evenly over the cookie surface.
  7. Decorate with sliced fruit and serve.
  8. Refrigerate any leftovers immediately.
