Shepherd's Pie

Shepherd's Pie uses some leftover beef and a bunch of other ingredients for a meal-in-one.


  • 2 cups mixed vegetables , frozen
  • 2 Tbsp. olive oil
  • 1/2 cup onion, yellow , chopped
  • 2 cups beef , cooked
  • 1 pound potatoes , diced
  • 1 tsp. sea salt
  • 2 Tbsp. butter
  • 1/4 cup sour cream
  • 2 Tbsp. onion, green
  • 1/4 cup sharp cheddar cheese , shredded
  • 2 cloves garlic , sliced
  • 1/2 cup beef broth


  1. Thaw frozen vegetables.
  2. Place diced potatoes in a pot large enough to cover with 1 to 1 1/2 inches of water.
  3. Add salt to the water and boil potatoes until a fork easily pierces them.
  4. Drain water and mash potatoes with butter, sour cream, green onion and shredded cheese.
  5. In the mean time, heat oil in a skillet over medium heat.
  6. Saute onion and garlic until translucent, about 5 minutes.
  7. Add mixed vegetables and beef broth.
  8. Cook for 5 minutes, then add the cooked beef to warm for about 3 minutes.
  9. Pour beef mixture into a greased casserole dish.
  10. Top with mashed potatoes.
  11. Bake in a 400 degree F oven for about 30 minutes, broiling the potatoes for 2-3 minutes to finish browning if necessary.
