Slow Cooker Shredded Beef Sandwiches

Whether you want dinner ready when you get home, or a no-fuss crowd-pleasing meal, this is it.


  • 2 1/2 pounds beef roast
  • 1 cup tomatoes, diced
  • 1 cup salsa
  • 1 cup chopped sweet onion
  • 2 cloves garlic, minced
  • 1 Tbsp. chili powder
  • 1 Tbsp. honey
  • 3/4 tsp. cumin
  • 1 1/2 cups beef broth
  • 1 cup shredded cabbage
  • 1/2 cup sliced tomatoes
  • reduced fat sour cream
  • 4 each crusty French rolls


  1. Place beef in a 5-quart slow cooker.
  2. Add the diced tomatoes, salsa, onion, garlic, chili powder, honey and cumin.
  3. Pour the broth over the top.
  4. Cook on high for 1 hour, then reduce heat to low and cook for 8 additional hours.
  5. Remove the lid for the last 30 minutes of cooking to thicken the sauce (optional).
  6. Remove beef from the slow cooker and shred with two forks.
  7. Remove half of the sauce from the slow cooker and reserve to pour over rice.
  8. Return shredded beef to remaining sauce and cover to keep warm.
  9. Serve on crusty French rolls with shredded cabbage, sliced tomato and sour cream.
