Ingredients

  • 1 pkg. 7-inch flour tortillas (either white or whole wheat)
  • 2 lbs. boneless skinless chicken breast or lean beef (flank steak, London broil, round steak, etc. work well)
  • Fajita marinade (or one envelope of the packaged marinade)
  • 1 med. Sweet onion, sliced
  • 1 med. Bell pepper (red, green, or yellow), sliced
  • 3 Tbsp. Oil for sautéing
  • 2 cups shredded cheddar cheese
  • 1 med. tomato, diced
  • 1 can sliced black olives
  • 1 can jalapeno slices
  • 1 8-oz. sour cream
  • Guacamole and Salsa (optional)

Instructions

  1. Prepare and marinate meat according to recipe instructions. In a large frying pan, heat oil over medium-high heat. Place sliced onion and pepper in heated oil and sauté until lightly browned. Remove vegetables from the pan. Add additional oil if necessary, and cook marinated meat. Warm tortillas in the microwave on a plate covered with a damp paper towel. Serve fajitas with remaining ingredients.
  2. Side dish serving suggestions: refried beans, Spanish rice
