Stuffed French Toast

Serving Size: Makes 4 servings.

Breakfast for dinner is one of my favorite comfort foods. Choose sweet*- or savory-stuffed options for a quick dinner.


  • 8 slices French bread, cut 1 1/2 inches thick
  • 8 ounces Turkey sausage, cooked
  • 1 cup Shredded cheddar or Swiss cheese
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp. sugar
  • 1/4 tsp. cinnamon


  1. Cut a pocket in the crust of each slice of bread.
  2. Toss together sausage and shredded cheese and put in pocket.
  3. Beat eggs, milk, sugar and cinnamon together in a shallow bowl.
  4. Dip both sides of the bread; cook on a greased hot griddle or pan until browned on both sides.
  5. Serve with maple syrup.
  6. * Sweet Stuffing Option:
  7. Substitute 8 ounces of softened cream cheese blended with 1/3 cup sugar and 1 teaspoon vanilla for the sausage and shredded cheese.
  8. You can also add 1/2 cup pureed berries or peaches to the cream cheese before stuffing.
