Slow Cooker Carne Asada

This is a fix-it-and-forget-it main dish.

Ingredients

  • 2 pounds beef (flank steak, brisket, etc.)
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 2 cans stewed tomatoes, Mexican recipe
  • ΒΌ cup water
  • 12 corn or flour tortillas, warmed

Instructions

  1. Take beef and rub minced garlic into it.
  2. Place in a slow cooker with the onion, tomatoes, and water.
  3. Cook on low for about 8 hours, or until the meat is tender.
  4. Remove the beef from the slow cooker and shred with two forks.
  5. Return the beef to the slow cooker to keep warm.
  6. Serve with warmed tortillas, guacamole, shredded cheese and sour cream.

Notes

I've also made this recipe with leftover brisket or roast -- just cut the cooked beef into bite-sized piecesand let the flavors blend in the slow cooker for a couple of hours before serving it. If you want some extra heat, add a finely chopped and seeded jalapeno pepper.
