Sausage and Peppers

Another Italian staple… if you don’t have the time to finish the recipe in a crock pot, be sure you use a pan that is large enough to hold all of the ingredients. After the onions, garlic, and green pepper are cooked, add the sausage, tomatoes and oregano to the pan and cook on low, making sure to stir occasionally so that things don’t burn. Don’t eat pork? See if your grocery store makes a chicken- or turkey-based Italian sausage.

Ingredients

  • 8 links Italian Sausage
  • 1 med. onion, sliced
  • 1 clove garlic, sliced
  • 1-2 green bell peppers, sliced
  • 1 large can peeled tomatoes undrained
  • ½ tsp. oregano

Instructions

  1. Cook sausage links on the stovetop until they are browned and cooked completely through.
  2. Remove sausage from the pan.
  3. Add 1 tablespoon of olive oil to the pan.
  4. Sauté onions and garlic until they are translucent, then add the peppers and cook until they become soft.
  5. Transfer sausage and onion/pepper mixture to a crock pot.
  6. Pour the can of tomatoes and oregano over everything.
  7. Set the crock pot to low and cook for 1-2 hours to allow the flavors to blend.
  8. This can be served either as sandwiches or as an entrée.
