Parmesan Crusted Salmon

Serving Size: serves 4.

Quick, relatively healthy, and elegant-looking with minimal effort. My kids love to eat the salmon because of the flavor-filled crust that is broiled on top.

Ingredients

  • 4 ea. skinless salmon fillets
  • 1 Tbsp. lemon juice
  • ½ c. bread crumbs (I frequently used the ends of a loaf of whole wheat bread that I grind in my food processor)
  • ¼ c. grated parmesan or Romano cheese
  • ¼ c. chopped parsley
  • 1 tsp. granular garlic (or garlic powder)
  • 1 Tbsp. olive oil
  • sea salt and pepper to taste

Instructions

  1. Lightly grease a broiler pan and place the salmon fillets on it.
  2. Brush lemon juice on the top of each fillet.
  3. In a medium-sized bowl, combine the remaining ingredients.
  4. The mixture should look like coarse crumbs once the olive oil has been combined thoroughly.
  5. Set your oven to the broil setting and place the rack one level down from the top.
  6. Broil the fillets without the bread crumb mixture for about 5-7 minutes, depending on the thickness of the fillets.
  7. Remove the pan from the oven and spread the crust evenly over the fillets.
  8. Broil for an additional three minutes, or until the crust is browned.
  9. Serve immediately.
