Italian Chicken Simmer

It's the time of year when we all crave some warm comfort food. This one-dish dinner goes great with pasta or rice.

Ingredients

  • 1 Tbsp. olive oil
  • 1 1/2 pounds chicken quarters
  • 1 can tomatoes, crushed with basil, 28 oz.
  • 1 tsp. dried oregano
  • 1/4 cups tomato paste
  • 1 clove garlic, minced
  • 1/4 cup Parmesan cheese
  • 1/2 cup mozarella cheese , shredded

Instructions

  1. Remove the skin from the chicken quarters.
  2. Heat the olive oil in a non-stick skillet over medium-high heat.
  3. Brown chicken quarters (cut them apart before browning if you like) for 10 minutes.
  4. Add tomatoes, oregano, tomato paste and garlic; mix well.
  5. Cover and simmer on medium low for about 20 minutes, or until chicken registers 165 degrees F.
  6. Remove from heat and stir in Parmesan cheese.
  7. Sprinkle chicken with shredded mozzarella before serving.
