Easy Shrimp Scampi


  • 1 pound shrimp, peeled and deveined
  • 3 tbsp butter
  • 1/4 cup grapeseed oil (or substitute olive oil)
  • 1/3 cup white wine
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 pound dry pasta


  1. Prepare pasta according to package directions. Melt half the butter in a large skillet over medium heat. Add half the grapeseed or olive oil, and half the wine. Add half the garlic and saute for 1-2 minutes, until garlic is fragrant and just starts to brown. Add 1/3 to 1/2 the shrimp to the skillet and cook 3-4 minutes per side, until shrimp is pink and cooked through. Remove cooked shrimp from skillet to a serving dish and cover to keep warm. Add remaining butter, oil, wine, and garlic to the pan. Add remaining shrimp, in batches if necessary to keep from crowding. When you are finished cooking the shrimp, pour any remaining sauce in the pan over the shrimp and garnish with chopped parsley. Serve immediately over cooked pasta.
