  • 2 pounds lean ground beef or turkey
  • 2 Tbsp. olive oil
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 lg. can crushed tomatoes
  • 1 lg. can tomato sauce
  • 1 medium green bell pepper, chopped
  • 2 Tbsp. chili powder
  • 2 tsp. cumin
  • 1/8 tsp. cayenne
  • 1 tsp. oregano
  • salt and pepper to taste
  • 2 cups canned kidney beans, drained and rinsed


  1. In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and cook for about 5 minutes, stirring occasionally. Add the ground beef and cook until completely browned. Drain the meat and break it into pieces if necessary. In a large stock pot, add the beef mixture and remaining ingredients. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 to 2 hours.
