Cheddar Stuffed Chicken Breasts

Something different for the grill.


  • 4 boneless, skinless chicken breast halves
  • sea salt & pepper to taste
  • 3 oz. cheddar cheese
  • 1 Tbsp. butter, melted
  • 1/3 cup sour cream
  • 1/4 cup salsa


  1. Heat gas or charcoal grill. Between sheets of plastic wrap or waxed paper; place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. Sprinkle chicken with salt and pepper.
  2. Cut cheese into slices about 3 x 1 x 1/4 inch; one per serving. Place 1 slice in center of each chicken breast. Roll chicken around cheese, folding in sides. Brush rolls with butter. Carefully brush grill rack with oil. Place chicken rolls seam-side down on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning after 10 minutes, or until the temperature is 170 degrees F.
  3. Serve chicken with sour cream and salsa.
