Blackened Chicken Breasts

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 Tbsp steak seasoning
  • 1 Tbsp olive or grapeseed oil
  • 1 cup diced mango
  • 1 ripe avocado, diced
  • 2 Tbsp chopped green onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2 Tbsp lime juice (about what you will get from squeezing 1 lime)

Instructions

  1. Preheat oven to 375 degrees F. Coat chicken breasts on both sides with steak seasoning. Heat oil in a skillet over medium heat and brown chicken on both sides. (Turn it only once to help preserve the moisture in the chicken.) Transfer chicken breasts to a baking dish and bake for about 15 minutes, until a meat thermometer registers 165 degrees F. Make salsa by tossing together the mango, avocado, green onion, bell pepper, cilantro and lime juice. Serve the chicken breasts with salsa over it.
