Beef Vegetable Kabobs

Another quick-fix dinner for busy families. Remember to soak bamboo scewers in water to keep them from burning. The beef can marinate overnight. Take advantage of the great seasonal vegetables in your area.

Ingredients

  • pounds beef , cubed
  • cup soy sauce, low-sodium
  • cup olive oil
  • 2 Tbsp. lemon juice
  • 2 cloves garlic , minced
  • 1/2 tsp. ginger, ground
  • 1/2 tsp. granular onion
  • 1 each pepper, red
  • 1 each pepper, green
  • 1 each onion, yellow
  • 8 oz. mushrooms, baby bella

Instructions

  1. Dice beef into 1 1/2-inch cubes.
  2. In a bowl, whisk together soy sauce, olive oil, lemon juice, garlic, ginger and granular onion.
  3. Reserve 1/4 cup of marinade for basting.
  4. Toss beef in remaining marinade to coat and refrigerate for several hours or overnight.
  5. Cut peppers and onions into 1-inch pieces and remove the stems from the mushrooms.
  6. Thread meat and vegetables onto skewers and grill over medium heat, turning and basting frequently.
  7. Beef will be medium-rare in 8-10 minutes.
  8. Serve immediately.
