Baked Salmon with Thyme

Serving Size: Serves 4.

A healthy family meal with lots of taste. Thyme is a hearty perennial herb that comes back early in the Spring.

Ingredients

  • 1 pound salmon fillets with the skin on
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh lemon zest
  • 1 Tbsp. chopped fresh thyme
  • sea salt and pepper to taste

Instructions

  1. Preheat the oven to 275 degrees.
  2. Lightly brush the bottom of a 9x13 glass baking dish with olive oil, and lay the salmon fillets skin-side down in the dish.
  3. Mix together the olive oil, lemon zest and thyme, brush evenly over the fillets.
  4. Season with salt and pepper, then let the fillets stand for 10-15 minutes before baking.
  5. Bake until fish is opaque and flakes easily, about 15 minutes, depending on the thickness of the fish.
