Asian Beef with Noodles

Asian Beef with Noodles

Serving Size: Serves 4

This is a quick one-dish dinner. If you use frozen broccoli, run it under cold water to thaw it slightly before adding it to the pan. Using a whole wheat variety of pasta adds fiber and nutirents to the dish without sacrificing taste. If you want to spice the dish up a little, increase the fresh ginger to 2 tablespoons and add up to 1/2 teaspoon crushed red pepper flakes. You can also substitute chicken breasts or ground beef for the meat.

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. lean beef (top sirloin steak), sliced thin
  • 1 cup broccoli florets, chopped
  • 4 ea. scallions, thinly sliced
  • 1 Tbsp. minced fresh ginger
  • 1 clove garlic, minced
  • 3 Tbsp. stir-fry sauce
  • 8 ounces (1/2 package) angel hair pasta (I used a whole wheat variety, and the kids loved it!)

Instructions

  1. Cook pasta according to package directions.
  2. Heat the oil in a skillet over medium-high heat, add beef and cook until the beef is no longer pink.
  3. Add the broccoli, ginger, and garlic to the skillet and cook for about 5 minutes.
  4. Turn off the heat and stire in the stir-fry sauce.
  5. Add cooked angel hair pasta to the skillet and toss to combine.
