Adam’s Favorite Biscotti

Yield: 2 dozen


  • 1 cup slivered almonds
  • 2 cups flour (approximately)
  • 3/4 cup sugar
  • 1 1/4 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 Tbsp. fresh grated orange zest
  • 2 eggs, slightly beaten
  • 1/2 cup canola or safflower oil
  • 1 tsp. vanilla extract


  1. Combine all dry ingredients and slivered almonds into a bowl.
  2. Add the oil, eggs and vanilla; mix.
  3. You should be able to handle the dough without it being too sticky -- add flour if necessary.
  4. Divide dough into two equal parts.
  5. Form dough into 2 inch diameter logs.
  6. Place on baking sheet and flatten slightly.
  7. Bake at 350 degrees for 30 minutes.
  8. Remove baking sheet from oven and cool for 15 minutes.
  9. Slice loaves into 1-inch slices.
  10. Place back on baking sheet, cut side up, and bake for an additional 12 minutes.
  11. Cool completley.
  12. Dip in melted chocolate if desired.
