White Chocolate Peppermint Creamer
 

It’s important to add the flavoring at the end of the recipe, after you’ve removed it from the heat.  Since extracts are alcohol based, they can evaporate too quickly if you add them to hot liquids.

2 cups        half and half

1 cup          white chocolate chips

½ tsp.         vanilla

2 tsp.          peppermint extract

Pour half and half into a 1-quart sauce pan.  Warm over medium heat, adding white chocolate chips.  Stir until chips have completely melted.  Remove from heat and add vanilla and peppermint.  Place in a covered container and refrigerate.
