The hops in the beer will make this brisket amazingly tender without adding a "beer" taste to the meat. You can use a non-alcoholic variety and achieve the same result. This can be prepared in the oven or in a crock pot.
1 3-4 pound beef brisket, trimmed
2 cloves garlic, minced
salt & pepper to taste
1 large sweet onion, thinly sliced
1 bottle beer
Rub minced garlic, salt and pepper into the meat. Cover the surface of the brisket with the sliced onions. Pour the beer over the brisket and onions. Cook on high in a crock pot for 6-7 hours or in a 325 degree oven (covered with foil in a baking dish) for 4-5 hours.
