Peppermint Bark
 

I love the festive appearance of this candy.  Although you can use a milk or dark chocolate, I prefer the way white chocolate offsets the red and green candies.  If you want to use milk or dark chocolate, try substituting toffee bits for the crushed candies.  When I make this, I use a product called "Red and Green Peppermint Crunch" made by CK Products.  Your local candy supply shop may have this in stock.

1 lb. white chocolate

1 cup crushed red and green peppermint candies

Line a cookie sheet with wax paper or aluminum foil.  Carefully melt the white chocolate in the top of a double boiler or in the microwave.  Stir in the crushed candies.  Pour mixture onto lined cookie sheet and spread into a thin layer.  Place in refrigerator to cool.  Break into small pieces to serve.

Gift Idea:

Place about 1/4 pound of the candy in a cellophane bag.  Tie with colored ribbon and use as a stocking stuffer or place inside a coffee mug with an envelope of gourmet hot chocolate.
