Yes, you can marinate beef diced into 1-inch cubes to make these kabobs as well. To round it out, I recommend serving these with a Caprese Salad.
1 lb boneless, skinless chicken breast
1/2 tsp. granular garlic
1/4 cup Italian salad dressing
1 tsp. Italian seasoning (dry)
1 cup green and/or red pepper, cut into 1-inch pieces
1 pkg. whole white or baby bella mushrooms
1/4 cup grated Parmesan cheese
1/2 cup pizza sauce
Trim any visible fat from the meat, then dice it into 1-inch pieces. Heat gas or charcoal grill. On each of 4 metal skewers, alternately thread chicken, bell pepper and mushrooms, leaving 1/4-inch space between each piece. Brush kabobs with dressing; sprinkle with Italian seasoning and garlic. Place kabobs on grill over medium heat. Cover grill; cook 9 to 11 minutes, turning once, or until chicken is no longer pink in center. Immediately sprinkle with cheese.
While kabobs are grilling, heat pizza sauce in small saucepan over low heat. Serve kabobs with warm sauce and additional Parmesan cheese if desired.
