Orzo is one of my favorite pastas to use. It's versatile, and a "kid-friendly" size while still feeling like you're eating "adult" food. My great-aunt makes this without the basil for the kids. They all look forward to "Pastina" -- and she serves it to them in a bowl with an ice cube so that they don't burn their tongues. The next time I made this at home, my kids asked for ice cubes.
8 oz. Orzo pasta
1 tsp. sea salt
1 Tbsp. butter (no substitutes)
ΒΌ cup grated Parmesan cheese
2 Tbsp. chopped fresh basil
Prepare pasta according to package directions, adding the salt to the water to flavor the pasta. Drain pasta and stir in the remaining ingredients. Serve Immediately.
