Inside-Out Burgers
 
These burgers can be grilled outside or prepared under a broiler. There are two different versions listed here, but the possibilities are endless! Take your favorite burger toppings and stuff them inside.

1 pound    lean ground beef
1 clove      garlic, minced
1 Tbsp.     fresh parsley, finely chopped 
                  sea salt and pepper to taste
1/2 cup     shredded cheddar cheese
1/4 cup     cooked bacon, crumbled into pieces

                  sea salt and pepper to taste
1/2 cup     bleu cheese crumbles
1/2 cup     caramelized onions

Caramelized onions can be made by sauteing 1/2 cup sliced onion in 1 tablespoon of butter until onions are translucent. Sprinkle 2 teaspoons of brown sugar over the translucent onions, stirring for about 1 minute until the sugar melts and the onions are coated.

To make patties, combine the ground beef, minced garlic, parsley, sea salt and pepper in a bowl. Divide meat into 8 equal portions. Form each portion into a thin patty that is 4 inches in diameter. On 4 of the patties, put 2 tablespoons of the shredded cheddar cheese and 1 tablespoon of the bacon pieces (or 2 tablespoons bleu cheese and 2 tablespoons caramelized onions) in the center of the patty, leaving 1/2 inch around the edge of the patty. Top each patty with a plain patty and pinch the edges to seal. Grill over medium-high heat for 4 to 5 minutes on each side. You may need to oil the grill to keep the patties from sticking by oiling a paper towel and using grill tongs to spread the paper towel over the grill. NEVER use pan coating spray on a hot grill.
