Honey Glazed Pork Roast
   

2 lbs.         pork roast

¼ cup        honey (or less if you prefer)

3 Tbsp.     Dijon-style mustard

1 tsp.         black pepper

½ tsp.        dried oregano

½ tsp.        dried  thyme

Preheat the oven to 300 degrees. Score the pork roast lightly on both sides, then place in a glass baking dish. Mix together honey, mustard, pepper, oregano, and thyme. Brush about half of the mixture over one side of the scored roast. Reserve the remaining mixture for the other side. Bake the pork roast for about 40 minutes. Remove it from the oven and flip the roast over, using the remaining glaze to cover that side. Return the roast to the oven and bake for another 30-45 minutes, or until the internal temperature reaches 170 degrees F. Serves 4-6.
