Fruit Pizza
 

This is one of my favorite springtime desserts. You can change it up by using different fruits. It's a great way to get your kids to try new things!

½ recipe   Sugar Cookie dough

2 cups       sliced fruit (strawberries, kiwi, Mandarin oranges, pineapple, blueberries, mango, etc.)

8 oz.          cream cheese, softened

¼ cup        powdered sugar

½ tsp.        vanilla

                 

Line a baking stone with parchment paper (rectangular or round is fine). Pat sugar cookie dough to about 1/2 inch thickness, leaving room at the edge of the baking stone for the cookie to spread while baking (about 2 inches). Bake cookie at 350 degrees until cooked through and browned, about 20 minutes. Allow cookie to cool completely before decorating.

In a medium-sized bowl, mix together the cream cheese, powdered sugar and vanilla. Spread evenly over the cookie surface. Decorate with sliced fruit and serve. Refrigerate any leftovers immediately.
