Apricot Coconut Bars
 

I remember these from when I was a little girl. It's important to use Solo brand filling - others are too runny and the result isn't very good.

2 cups        unbleached flour

1  cup         sugar

½ tsp.         baking soda

1 tsp.          salt

¾ cup         butter

1½ cup       flaked coconut

½ cup         walnuts (optional)

2 cans        Solo brand Apricot cake and pastry filling (look for this with the other pie fillings)

Mix together flour, sugar, baking soda, salt, and butter with a pastry cutter or mixer until it resembles coarse crumbs. Stir in the coconut by hand. Press half of the mixture into a greased 9x13 inch baking dish. Spread the filling evenly over this. Sprinkle the remaining mixture and walnuts over the top. Bake at 400 degrees for 20-25 minutes. Cool before serving.
