Chili
 

Chili

Make this with either ground beef or ground turkey. This recipe is fairly mild, but you can spice it up by adding additional chili powder, cumin, cayenne, or hot sauce.

2 pounds       lean ground beef or turkey

2 Tbsp.          olive oil

1 cup             chopped onion

3 cloves        garlic, minced

1 lg. can        crushed tomatoes

1 lg. can        tomato sauce

1 medium     green bell pepper, chopped

2 Tbsp.         chili powder

2 tsp.             cumin

1/8 tsp.          cayenne

1 tsp.             oregano

                      salt and pepper to taste

2 cups           canned kidney beans, drained and rinsed

In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and cook for about 5 minutes, stirring occasionally. Add the ground beef and cook until completely browned. Drain the meat and break it into pieces if necessary.  In a large stock pot, add the beef mixture and remaining ingredients. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 to 2 hours. Serves 8 to 10.
