Chicken is one of the staples of my diet, but that means that I am frequently looking for new and interesting ways to serve it. I get bored eating the same thing over and over, but I want to make sure that what I fix is tasty and as healthy as possible. As I've said before, the close you are to eating the food in its natural state, the better off you are nutrtionally. The more a food is processed, the more nutirents it loses. I have several recipes that start with roasting a whole chicken, using as much of it as possible, and then using the carcass to make my own chicken broth, which I then freeze.
