I am always looking for a new way to use leftover roasted chicken. This is a quick weekday dinner.
2 c. sliced roasted chicken
2 Tbsp. fresh squeezed lemon juice
2 tsp. Greek seasoning
½ tsp. paprika
½ c. cucumber, seeded and chopped
¼ c. red onion, chopped
6 oz. fat-free plain Greek yogurt
6 ea. Whole wheat pita rounds
3 c. mixed salad greens
