This recipe is one of my mom's Christmas regulars. My sister and I can count on her having at least one or two batches made to take to the office, share with friends who stop by, or just have around for munching.
1 cup butter
1/2 cup sugar
1/2 cup light corn syrup
2 eggs, separated
2 1/2 cups flour
2 cups finely chopped walnuts
24 candied cherries, halved
In a mixing bowl, cream butter, sugar and corn syrup. Add egg yolks and combine. Mix in flour. Wrap and chill dough for at least 2 hours. When chilled, roll dough into 1-inch balls. Dip into slightly beaten egg whites and roll through chopped nuts. Press 1/2 candied cherry into the top. Place on a greased cookie sheet. Bake at 325 degrees for 20 minutes
