24 wonton wrappers
olive oil
1 8-ounce package cream cheese, softened
1 clove garlic, minced
2 roma tomatoes, diced
2 green onions, sliced
4-6 fresh basil leaves, chopped
1/4 cup chopped parsley
salt and pepper to taste
Brush cups of a mini-muffin pan with olive oil. Place wonton wrappers in cups and then brush wontons with olive oil. Bake at 375 degrees for 7 minutes.
Combine cream cheese and garlic. In a separate bowl, combine remaining ingredients and drizzle with 2 tablespoons olive oil. Place 1 teaspoon of cream cheese mixture in bottom of each wonton cup. Just before serving, add a teaspoon of the tomato mixture on top of cream cheese. Makes 24 appetizers.
