This is a great vegetable mix that is appealing and crunchy. The vinegarette-based dressing allows the flavors to come through without being heavy.
1 head broccoli, chopped into bite-sized florets
2 carrots, sliced thin
1 can black olives, drained
1 can sliced water chestnuts, drained
1 pkg. cherry tomatoes
3-4 green onions, sliced
1/2 cup Italian dressing
Lightly steam broccoli and carrots for 2 to 3 minutes to soften them (they will still have a slight crunch). Combine steamed vegetables and remaining ingredients in a plastic or glass bowl and toss together. Chill before serving.
