1 1/2 pounds beef , cubed
3/4 cup soy sauce, low-sodium
1/4 cup olive oil
2 Tbsp. lemon juice
2 cloves garlic , minced
1/2 tsp. ginger, ground
1/2 tsp. granular onion
1 each pepper, red
1 each pepper, green
1 each onion, yellow
8 oz. mushrooms, baby bella
Dice beef into 1 1/2-inch cubes. In a bowl, whisk together soy sauce, olive oil, lemon juice, garlic, ginger and granular onion. Reserve 1/4 cup of marinade for basting. Toss beef in remaining marinade to coat and refrigerate for several hours or overnight. Cut peppers and onions into 1-inch pieces and remove the stems from the mushrooms. Thread meat and vegetables onto skewers and grill over medium heat, turning and basting frequently. Beef will be medium-rare in 8-10 minutes. Serve immediately. Serves 4
