Asian Beef with Noodles

This is a quick one-dish dinner. If you use frozen broccoli, run it under cold water to thaw it slightly before adding it to the pan. Using a whole wheat variety of pasta adds fiber and nutirents to the dish without sacrificing taste. If you want to spice the dish up a little, increase the fresh ginger to 2 tablespoons and add up to 1/2 teaspoon crushed red pepper flakes. You can also substitute chicken breasts or ground beef for the meat.

1 Tbsp. olive oil

1 lb. lean beef (top sirloin steak), sliced thin

1 cup broccoli florets, chopped

4 ea. scallions, thinly sliced

1 Tbsp. minced fresh ginger

1 clove garlic, minced

3 Tbsp. stir-fry sauce

8 ounces (1/2 package) angel hair pasta (I used a whole wheat variety, and the kids loved it!)

Cook pasta according to package directions. Heat the oil in a skillet over medium-high heat, Add beef and cook until the beef is no longer pink. Add the broccoli, ginger, and garlic to the skillet and cook for about 5 minutes. Turn off the heat and stire in the stir-fry sauce. Add cooked angel hair pasta to the skillet and toss to combine. Makes 4 servings.
