1 cup slivered almonds
2 cups flour (approximately)
3/4 cup sugar
1 1/4 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1 Tbsp. fresh grated orange zest
2 eggs, slightly beaten
1/2 cup canola or safflower oil
1 tsp. vanilla extract
Combine all dry ingredients and slivered almonds into a bowl. Add the oil, eggs and vanilla; mix. You should be able to handle the dough without it being too sticky -- add flour if necessary. Divide dough into two equal parts. Form dough into 2 inch diameter logs. Place on baking sheet and flatten slightly. Bake at 350 degrees for 30 minutes. Remove baking sheet from oven and cool for 15 minutes. Slice loaves into 1-inch slices. Place back on baking sheet, cut side up, and bake for an additional 12 minutes. Cool completley. Dip in melted chocolate if desired. Makes 2 dozen cookies.
